Honey Pecan Pie

I’m one of those that thinks any and all desserts taste better with nuts, whether it be cookies, cakes, pies, brownies, muffins or bread {though I really don’t bake with nuts that often}.  So it’s no surprise that I’m a fan of pecan pie!

I’m not, however, a fan of unhealthy corn syrup.  This time of year has put pecan pie on my brain, so I searched for a recipe using only honey, and found a yummy one here.  Depending on whether you use a mild or strong honey will affect the type of flavor you result in.

1 cup chopped pecans
1 cup honey
3 beaten eggs
3 tablespoons butter
1 tsp. vanilla
9 inch pie crust


Bring honey to a boil, remove from heat, and add beaten eggs, constantly stirring until well mixed.  Be careful not to add the eggs without stirring them at the same time, or you may just end up with scrambled eggs in your pie. πŸ˜‰  Add the butter, vanilla and nuts.  Pour mixture into the pie crust.  Bake 325Β° for 25 minutes until the pie is set.

As you can see from the above picture, I am not a perfectionist when it comes to making pies.  I really should take the time to make pretty edges to my homemade crusts.  Maybe I’ll master that one of these days. πŸ™‚  Perhaps the pie could use an artistic touch, but it tastes fantastic! πŸ™‚

    Perfect timing… I just told my husband I need ed to take a pantry inventory to see if I had something to come up with for desert for Christmas Eve…this is perfect!!! I have everything and it sounds so YUMMMY!!!!!!!Check that off my list !
