Stewed Lentils and Rice

Ingredients

  • 1 Onion (Diced)
  • 2 cups Carrots (Diced)
  • 3 Garlic Cloves (Minced)
  • 28 oz. cans Tomatoes (or fresh tomatoes) (Diced)
  • 1 cup Uncooked Lentils (Sorted and Rinsed)
  • 2 cups Chicken or Vegetable Stock
  • 1 tablespoon Raw Apple Cider Vinegar
  • 2 teaspoons Thyme Leaves
  • Salt and Pepper to Taste

Directions

Step 1
Saute onion, garlic, and carrots in butter on medium-low for 10 minutes.
Step 2
Add tomatoes, lentils, broth, and seasonings to the pan.
Step 3
Bring to a boil, reduce heat, cover and simmer 30-40 minutes. Add more liquid during cooking if necessary.
Step 4
Remove from heat and stir in the vinegar.
Step 5
Serve over rice and enjoy!
