Whole Wheat Honey-Sweetened Oatmeal Raisin Cookies

I don’t always love cookies that have only wheat flour in them.  And finding a cookie that tastes really good only being sweetened with honey is rare, so I didn’t expect these to taste all that good.  Maybe edible and healthy, but not good.

I was in for a pleasant surprise when I took my first bite!  These cookies do not have that whole wheaty taste to them, and the honey sweetens them perfectly!

Though I love coconut, you cannot even taste it in this cookie.  Somehow all these ingredients blend together to make a delicious, healthy cookie! 

These cookies are so quick and easy to make!

Simply mix the dry ingredients ~ no sifting!



Add the wet ingredients {no need to dirty 2 bowls!}


And stir it all together.


It is that simple! 


Ingredients:

2 cups whole wheat flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 cup coconut flakes
2 cups oatmeal
1 cup raisins
1 1/2 tsp. cinnamon
1 cup coconut oil {can substitute butter}
1 cup honey
2 eggs

Directions:

Mix the dry ingredients.  Add the remaining ingredients.  Drop onto cookie sheet.  Bake 375º for 8 minutes.  Makes approximately 4 dozen cookies.
