I recently made this creamy coleslaw for the 4th of July weekend, and one of my friends said it was the best she’d eaten. It just happens to be my favorite too!
This BLT Coleslaw has lots of flavor with the added bacon and tomatoes, and the raw apple cider vinegar adds wonderful nutrition! As for the handful of sugar? There is none! I will eat the traditional sweet coleslaw when it’s served to me, but when making it myself, I completely leave the sugar out. I prefer to save my sugar intake for something chocolatey. 😉
BLT Coleslaw
16 oz. shredded cabbage
1 cup mayonnaise
3 tablespoons raw apple cider vinegar
1 cup cherry tomatoes, cut into 4ths
1/2 pound cooked, crumbled bacon
Salt and pepper to taste
In a bowl, mix together mayo and vinegar. Stir in shredded cabbage. Toss in tomatoes and bacon. Sprinkle with salt and pepper.
That’s it! This coleslaw is very simple and tasty!
