Just made these whole wheat, no sugar muffins this morning, and we loved them! I always enjoy watching my girls gobble up something that is good for them. Even my 3 year old who typically doesn’t care for healthy muffins at her age ate these up! I didn’t have quite a cup of mashed banana, so I filled up the measuring cup the rest of the way with applesauce. I also love nuts with muffins, so I sprinkled pecans on top. They would be fabulous mixed in the batter too.
Whole Wheat Banana Muffins
Ingredients:
1 3/4 cups whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
1 tablespoon ground flax seeds {optional}
1/3 cup olive oil
2 eggs
1/2 cup honey
1 cup mashed banana
1/4 cup milk or water
Instructions:
- In one bowl, combine flour, baking soda, salt and flax
- In another bowl, beat together oil, eggs, and honey
- Add banana and milk/water to the other wet ingredients and beat until mixed.
- Add flour mixture to wet and mix well.
- Pour batter into 12 muffin cups.
- Bake 325 degrees for about 15 minutes until knife inserted in center of muffin comes out almost clean.
