Whole Wheat Muffins

 Just made these whole wheat, no sugar muffins this morning, and we loved them!  I always enjoy watching my girls gobble up something that is good for them.  Even my 3 year old who typically doesn’t care for healthy muffins at her age ate these up!  I didn’t have quite a cup of mashed banana, so I filled up the measuring cup the rest of the way with applesauce.  I also love  nuts with muffins, so I sprinkled pecans on top.  They would be fabulous mixed in the batter too.    

Whole Wheat Banana Muffins

Ingredients:

1 3/4 cups whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
1 tablespoon ground flax seeds {optional}
1/3 cup olive oil
2 eggs
1/2 cup honey
1 cup mashed banana
1/4 cup milk or water

Instructions:

  1. In one bowl, combine flour, baking soda, salt and flax
  2. In another bowl, beat together oil, eggs, and honey
  3. Add banana and milk/water to the other wet ingredients and beat until mixed.
  4. Add flour mixture to wet and mix well.
  5. Pour batter into 12 muffin cups.
  6. Bake 325 degrees for about 15 minutes until knife inserted in center of muffin comes out almost clean.
